Our artisanal and sustainably sourced tequila is born some time before distillation, in our agave crops where they spend several years before being mature. A unique condition of agave distillates. Only the best plants are selected and harvested by hand by the jimadores, a tradition of many generations. The pineapples are cooked in the traditional masonry oven and then ground, the honey is fermented slowly and naturally and then distilled twice in copper stills. Finally, the tequila is rested in American and French oak barrels for at least 6 months. Our master tequila maker distills this magnificent additive-free tequila proudly in Los Altos de Jaliscos, the land of tequila in western Mexico. Each lot is unique and limited production. In this process, nature and the community from which it comes are deeply respected.
Raw material: 100% Maguey EspadÃn (Agave Angustifolia) 8 to 10 years of maturation. Vol. and % ABV: 700ml 40% ABV.
Tasting notes: Mezcal with spicy flavors with a slight bitter and sweet finish, which is typical of cooked agave. Intense vegetal and fatty flavor that reminds us of freshly harvested potatoes and chayote.
