The Dayak community of Sarawak celebrate Gawai with a myriad of traditions and rituals, but tuak proves to be one of the festival’s cornerstones. Gawai is a period of festivity that honours the end of harvests and ushers in a new rice planting season. The traditional rice spirit is intrinsic to Gawai for its ability to showcase the quality of the season’s rice and physicalise the community’s labour.

Ngirupp’s expression of Tuak hails from Lubok Antu, near the Kalimantan border. The rice wine is fermented using natural yeasts and is aged in glass vessels for 2 years. The resulting aromas are of pineapple and tropical fruits, and in the mouth the palate is of ripe bananas, with a citrusy tang and a long lingering flavours of rice. This Tuak unlike many others, is not high in residual sugar and best described as being off-dry / semi-sweet.

Each bottle denotes the year the spirit was brewed, the person behind the brewing process, and the cultural significance of the drink.
