Mahon is produced on the island of Menorca, the most northern of the Balearic islands in the Mediterranean, near Spain. Younger versions of Mahon taste buttery, fruity, and tart, overlaid with a slight sourness and hint of salt. With age, these flavors intensify; some older wheels tend to give that salty and piquant taste. Mahon can be eaten by sprinkling the cheese with freshly ground black pepper, olive oil, and tarragon. For a better experience of the taste, Mahon can be paired with an assertive wine to stand up to its intense flavors.
